KETO Grilled Cajun Sausage & Chicken Skewers

 

Grilled Cajun Sausage & Chicken
Servings: 3

12 oz. Cajun Hollar Brand Andouille Sausage
12 oz Real Good Lightly Breaded Chicken Nuggets
1/2 cup Tony Chachere's Injectables Butter Marinade

Everything is pre-cooked so this is a quick one! In a bowl, combine the chicken nuggets and marinade. Stir to coat all nuggets evenly and let soak. Stir every couple minutes to make sure they're nice and coated. Don't worry about the coating falling off, enough will stay adhered to give the nuggest a beautiful texture. Preheat grill while chicken in marinating. 

Slice the sausage into nice thick chunks to make them easy to skewer. Once the grill is heated, quickly skewer the sausage and chicken, alternating every other piece. Once all skewers are assembled, brush the marinade left in the bowl over the entire skewer, flipping to get both sides. The breading from the chicken that came off while marinating adds a nice texture to the sausage as well! Use as much marinade as you'd like to completely cover the skewers and bring out the flavor of the andouille, it's sugar free, carb free, calorie free! 

Grill the skewers until heated through and there are some pretty grill marks on the sausage. Enjoy plain or use the dipping sauce of your choice! I made a simple remoulade with mayonnaise, lemon juice, mustard and Cajun seasoning.

Living the Vanlife, we try to use the grill as much as possible. Simple meals are the best since we're usually out exploring and discovering the area we're in. This one took me about 15 minutes to get all prepped, including clean up, and ready to grill. They were only on the grill about 5-8 minutes and we were ready to eat! After a day in downtown Houston in 90 degree heat, it was perfect to not add any heat inside the van! 

We found the Cajun Hollar Brand Andouille in Texas at H.E.B and knew we had to try it! It has amazing flavor that would hold up well to a good smoking so we'll definitely be trying it again! The Real Good Lightly Breaded Chicken Nuggets are that "special" treat for us as the ingredients aren't as clean as we'd like! The simplicity of them is perfect for days I'm not feeling the kitchen vibe!

KETO Tuna Lettuce Wraps

Tuna Wraps
Servings: 5

1 can Starkist EVO Solid Light Tuna
1 can Starkist Selects Chunk While Albacore
3 tbsp Best Foods Mayonnaise
2 tbsp Vlasic Dill Relish
1/2 Roma tomato
5 Romaine leaves
Salt & Pepper

So simple, just mix the tuna, mayo, relish together, add salt and pepper and scoop into the lettuce leaves! We love tomatoes so I sliced and quartered a Roma I had in the fridge and topped each one with three little slices. 

I made it into five servings to make it easy to calculate based on how many you eat at one sitting. I had two and hubby had three so it was the easiest way to track our carbs and calories.

We were only on our 5th day of our now-serious Vanlife Keto journey! We took a break for our first three years of traveling, instead of just the first year as we told ourselves we'd do, so time to get serious!! We stopped at the rest area for the Recycled Roadrunner Sculpture in Las Cruces New Mexico at the perfect time for a picnic lunch! We're going to be as pure Keto as possible so the Catalina Crunch won't fit in but it was a nice addition of texture to the tuna wraps, next time pork rinds or cheese chips! (February 28, 2025)
