Chicken Taquitos

1/2 cup shredded sharp cheddar cheese
2 oz. shredded chicken
1 tsp taco seasoning
Mix the shredded chicken and taco seasoning together.
Now, the rest is a little tricky to explain but I'll try!!
Put 1/4 of the cheese on a flat non-stick cooking surface, skillet or griddle, in a 4.5"x3" rectangle.
Cook the cheese rectangles on medium high heat until the edges are getting dark and you're able to lift the edges with a spatula.
Add 1/4 of the chicken mixture in the center of the cheese lengthwise.
Now you'll need to spatulas, one to do the folding and one to hold the cheese rectangle in place.
Fold one long edge over the chicken then roll it over until it is a perfect little rolled taquito!
Remove from the griddle and let cool slightly as the cheese will harden, becoming perfectly crunchy!
Serve as pictured above with lettuce, sour cream and guacamole or simply with some hot sauce or salsa. However you like your chicken taquitos is exactly how you'll enjoy these!
